To prepare the melon juice: Remove skin and seeds from a ripe honeydew melon, cut into slices, blend until smooth, and fine strain. To build the cocktail: Add melon juice and Ghia Berry Apéritif to a highball glass. Fill with ice, top with tonic water, and stir gently to combine. Garnish with a rosemary sprig and a lemon wheel.
Editor's Note
Fresh honeydew juice creates a delicate, vegetal-sweet base. A bitter berry apéritif and tonic water provide a crisp, botanical counterpoint in this refreshing highball.
