This was the mocktail served at my fortieth birthday party. I wanted anyone in attendance that was abstaining, for Dry January or otherwise, to feel included. I also wanted to create a non-alcoholic drink that didn’t require a bottle of a non-alcoholic spirit. There are many quality offerings available in that space, but not everyone has easy access to them locally or the budget to try out a bunch of full sized bottles to find their favorites. First, make your syrup. Simmer equal parts sugar and water until the sugar dissolves. Add 1/2 cup raspberries and a few slices of peeled, fresh ginger, then bring to a boil. As soon as it’s boiling, remove it from the heat. Leave to cool for several hours, tasting frequently until the raspberry and ginger flavor is to your liking.
