This mocktail was born from a Valentine’s Day pop-up bar menu I helped design. While consulting, the manager found a random bottle of balsamic vinegar behind the bar and joked about needing to get rid of it. Naturally, I took that as a challenge—bet we’ll use that! Feel free to add some vodka if the mocktail version isn’t your thing. Balsamic isn’t new to my cocktails, its rich depth pairs surprisingly well with the spice of ginger beer. Basil Strawberry Balsamic Mule

Caged Heat
In a mug start by gently muddling strawberries and basil leaves. Add lime juice, syrup, and balsamic. Fill the mug with ice and top with ginger beer. Stir gently and garnish with an additional sprig of basil and a strawberry. Enjoy!
