As part of my DJ/Mixology series, The Bitter Pith Sessions, I curate a one-hour vinyl only DJ Set, and pair it with a cocktail. For my second session in the series, I have selected Paper Plane as the paired drink, and crafted a non-alcoholic version using my favorite NA spirits for the non-drinkers in the room.
Ingredients
- 0.75 ozRitual Zero-Proof Rum Alternative
- 0.75 ozWilderton Bittersweet
- 0.75 ozPathfinder Hemp & Root
- 0.75 ozLemon Juice
- 0.25 ozDemerara Syrup

Shake & Strain
Cocktail Coupe
- Combine all ingredients in a shaker and shake until well chilled - Double strain into a coupe glass - Garnish with a miniature paper plane or a lemon twist

A clever NA rebuild of the modern classic Paper Plane. It swaps bourbon, Aperol, and Amaro Nonino for a trio of complex zero-proof spirits, nailing the original's bitter, sour, and herbal balance.
