Deeply steeped black tea and tart cherry juice create a structured, tannin-rich base. A berry shrub and aromatic bitters add a balanced layer of acidity, spice, and dark fruit.
Ingredients
- 3 ½ ouncesOver-steeped Black Tea, Chilled
- 1 ½ ounceTart Cherry Juice (or Red Verjus)
- ¾ ounceBerry Shrub (see Note Below)
- 5-7 dashesAll The Bitter Aromatic Bitters

Wine Glass
Brew a strong cup of black tea and let it steep for 10 minutes, then chill. Optionally, add a sprig of rosemary to the tea while it steeps. Combine chilled tea, juice, shrub, and bitters in a wine glass and stir. (If all ingredients aren't already chilled, stir briefly with ice and strain into a wine glass.)
