Hibiscus tea is the star of this non-alcoholic cocktail that takes sour to the next level, combining fresh grapefruit juice and lime for a bitter, puckering punch. Agave nectar and egg white provide some balance and texture, while All The Bitter's New Orleans bitters— with bright flavors of anise, tart cherry, hibiscus, and rosehips—tie it all together.

Brew a strong cup of hibiscus tea, then chill. Add all ingredients to a cocktail shaker and dry shake (without ice) for 15 seconds. Add ice, shake again until chilled, and double strain into a coupe glass.

Editor's Note

Hibiscus tea provides the tannic structure usually reserved for spirits, while grapefruit and lime deliver a sharp, refreshing bite. A sophisticated zero-proof sour.
